Two weeks ago, Cos Cob’s Joey B’s restaurant, run by Dom Delfino, opened a food truck catering service with his son, Dom Jr. The former US Postal Service truck has been completely transformed and has a brand new kitchen inside equipped to whip up just about any item on the Joey B’s menu.
With the restaurant entering its tenth year, Delfino likes to refer to the addition of the truck as the “ten year anniversary food truck.”
In the short time the truck has been on the road, the Delfinos said they’ve already booked events including an engagement party, and anticipate booking confirmation, graduation and communion celebrations this spring.
In addition to offering the same options the restaurant menu, including Joey B’s popular salads, wraps, melts, burgers, fish and wedges, milk shakes, and Philly cheese steaks, the food truck will offer the option of a buffet style “tater tot bar,” where people can make their own “concoctions” with toppings including bacon, shredded cheddar cheese, sour cream, ranch dressing, pico de gallo or hot peppers.

“We wanted the restaurant to expand, and the sky’s the limit because we can go anywhere with the truck,” said Delfino.
“There’s been a recent trend with food trucks, and with the recent success of the restaurant, we wanted to expand and provide something else for our customers,” said Dom Jr.
