Good news, Greenwich! Fleisher’s Craft Butchery is coming to 160 East Putnam Ave in September.
The Greenwich location will be the butcher’s fourth location, building on its success in the Park Slope neighborhood of Brooklyn, NY; up the Hudson River in Kingston, NY and nearby in Westport, CT, where the company operates a popular meat-focused restaurant. Fleisher’s also operates a processing facility in Red Hook, Brooklyn.
Taking the space that was last home to Radio Shack, the butcher will operate next to Greenwich Cheese Company and Fjord Fisheries, enhancing the walk -to-all pedestrian-friendly Cos Cob hub.
Fleisher’s Craft Butchery is a craft, sustainable butchery, combining the best traditional approaches with modern day ideals. The nose-to-tail butcher works only with whole animals that have been ethically raised on pasture on small, local farms. The quality of Fleishman’s meat reflects where it comes from, as well as how it is processed, raised, cut and sold.
All of Fleisher’s shops offer a variety of introductory to intermediate butchery courses such as basic knife skills, safety techniques, animal anatomy, sausage making, hands-on carving workshops, and more. Cooking demos, taste tests and lectures on sustainability and sourcing are incorporated throughout the classes.
The craft butchery also sells its meat wholesale to a select group of top restaurants and offers catering, prepared foods and other products at its shops. Fleisher’s is also well known for its butcher training program where both novices and professionals learn butchering skills.
